Elbana recipe of Spaghetti alla Margherita (Granseola)
The granseola is known on the Island of Elba and in the province of Livorno with the name of margherita. Although it has less pulp compared to lobster it has a much tastier taste suitable for preparing an excellent sauce to season spaghetti and gnocchi. The daisy season runs from April to early summer.
Ingredients
A fairly large daisy (granseola), onion, garlic, parsley and chilli pepper, peeled tomatoes, white wine, spaghetti.
Preparation
Clean the daisy well by brushing the shell with a large hard brush. After uncovering the shell and breaking the legs and the trunk into rather large pieces being careful to collect the crustacean liquid that will be used later and will give flavor to the sauce.
Lightly brown the onion with the garlic and the chilli pepper in extra virgin olive oil, add the margherita at this point and brown until it has a nice reddish color.
Usually the females in spring have innumerable eggs in the lower part of the abdomen that will be added together with the rest.
At this point, sprinkle with white wine and the liquid passed to the thick sieve to retain any impurities.
Add the tomato and cook until the oil from the cooking surface rises to the surface. Season with salt and pepper and chopped parsley.
When the margherita is cooked remove and put aside the pieces in another pan covering them with the sauce enough to keep them warm. Sauté the spaghetti al dente and serve on the table accompanying the spaghetti with the pieces of the margherita.
